We tested this recipe on the Kamado Joe Konnected Joe but you could do it on any charcoal grill or even a campfire.
Ingredients for Two Open Face Sandwiches
- 1 Apple Wood Chunk
- 1/2 cup Arugula
- 8 ounces Brie, rind removed
- 4 tablespoons Butter, unsalted
- 2 tablespoons Honey
- 2 tablespoons Lanes BBQ Blackening Seasoning
- 2 tablespoons Parmesan flakes
- 2 tablespoons Reduced balsamic
- 1 Sourdough, Loaf (Sliced from side to side)
- 8 ounces fillet
Instructions
- Stabilize your grill at 450 F. Bank all the coals to one side of the fire box, top with an apple wood chunk and place a grill grate on the lowest setting, if you can set grates at different levels please do so. Cover the other half of the fire box with a 1 half-moon heat deflector and place the grill grate on the highest level.
- Place the Brie (rind removed) on the indirect side for 2 minutes to pick up a bit of smoke. Remove and transfer to a food processor. Pulse to whip in air, the cheese should triple in volume. Once fully whipped, transfer to the refrigerator to cool a bit.
- Cut sourdough length wise. Butter large slices of sourdough and toast off on the direct side for a bit of char, transition to the indirect side to finish toasting.
- Season fillet with Blackening seasoning and oil slightly before placing on the direct heat side of the grill. Cook till rare to medium rare. Rest and slice into thin ribbons.
- Toss the sliced steak, arugula and a dash of seasoning together and reserve.
- Transfer toasted bread to cutting board. Paint the toasted bread with smoked whipped brie, top with steak and arugula mixture, drizzle with honey and reduced balsamic, then finally top with Parmesan flakes and enjoy!
